This Gallo-Roman white wine is a recreation of a 1st-century offering wine, inspired by the legend of Cybele. Produced in the province of Narbonnaise, it was exported throughout the Empire from the port of NARBO MARTIUS (Narbonne) to Rome. This honeyed beverage infused with Mediterranean herbs was renowned for its ability to preserve youthfulness and vitality.

Crafted from the Vermentino grape variety, this white wine is flavored with honey, spices, and plants, representing the essence of the Gallo-Roman era. The recipe, derived from the writings of Roman agronomist Columella, has been preserved. It was considered a magical wine, credited with numerous healings and associated with the return of soldiers.

Carefully selected, this wine is made from Vermentino, white Grenache, and Verrmentino grapes grown in the stony clay-limestone terroir of the middle Corbières region. After maceration for 10 to 15 days, plants, spices, and aromatic herbs such as wild fennel, juniper from the scrubland, and grains of paradise are cold-infused, giving the wine its distinctive flavors.

This V Gallo-Roman from Narbonnaise BLANC is best enjoyed chilled but not overly cold, perfectly accompanying cheeses and desserts. Just like the Romans, it can also be savored during gustatio (modern-day tapas-style apéritif). The ideal serving temperature is between 4°C and 6°C. This sweet wine pairs well with apéritifs featuring tapas, foie gras, smoked or grilled fish, as well as cheeses at the end of a meal.
