Description: This Gallo-Roman beverage is a reimagining of a honeyed and spiced wine from the 1st century, with the uncertain name of Mulsum still intriguing historians about its historical origins. It was crafted in the province of Narbonnaise and exported throughout the Empire from the port of NARBO MARTIUS (Narbonne) to the port of Rome (Ostia). This honeyed wine, infused with Mediterranean plant essences, is made from a selection of grape varieties such as Carignan, Grenache, and Syrah, characteristic of the Terroir des Corbières.

The recipe for this unique Gallo-Roman beverage has been passed down through the writings of the renowned Roman agronomist Columella, born in Cadiz in the 1st century. According to the ancient texts of Apicius, the harmonious marriage of wine, honey, and a variety of plants and spices, including white rosemary, laurel, and grains of paradise, bestowed a festive character upon this wine. Moreover, this honeyed wine was recommended by Roman physicians for its supposed youth-preserving virtues, although it was forbidden for consumption by women and servants in Rome.

This honeyed and spiced wine, a true emblem of Gallo-Roman Narbonnaise, is meticulously selected and crafted from a blend of grape varieties, including century-old Carignan vines, Syrah, Grenache noir, and Mourvèdre. After fermentation for 10 to 15 days, it undergoes an 18-month aging process in tanks. At the end of this period, the plants, spices, and aromatic herbs, such as white rosemary from the Corbières, common laurel, and grains of paradise, are macerated cold in separate pouches, imparting distinctive and complex aromas to the wine.

The V Gallo-Roman from Narbonnaise is best enjoyed at room temperature or slightly chilled, making it a perfect accompaniment to cheeses and desserts. Just like the Romans, it can also be savored during the gustatio (today's tapas-style appetizers). It can also be used as a marinade or served as a table wine to complement grilled red meats. The ideal serving temperature ranges from 9°C to 12°C. This sweet wine pairs well with tapas-style appetizers, marinated and braised meats, stews, game dishes, as well as strong cheeses like Roquefort and goat cheese towards the end of a meal.
